Ron Swanby, owner of Swampy’s BBQ, completed construction on a barbecue kitchen at 215 E. Columbia Drive in Kennewick.
The facility features a modern design, with a covered patio/window service area and single slope roof. The L-shaped building is positioned to protect customers from prevailing winds. The 840-square-foot building includes a commissary kitchen that allows Swanby to expand his catering services.
The facility has a walk-in cooler, large dish pit area, storage space and room for food preparation, food sales, events and classes.
The building has gray corrugated siding and a gunsmoke-colored roof.
A grand opening and ribbon cutting was March 22.
Swampy’s BBQ was the first mobile food vendor at the Columbia Gardens Wine & Artisan Village, and the first to expand into a brick-and-mortar building on site, allowing Swanby to extend the restaurant’s days and hours of operation and offer an expanded menu.
“Swampy’s BBQ is one of the region’s most acclaimed food trucks and an anchor tenant at the Columbia Gardens Food Truck Plaza. We’re thrilled to see them grow,” said Port of Kennewick CEO Tim Arntzen in a statement. “Ron has been an outstanding ambassador for the wine and artisan village and a champion of east Kennewick revitalization.”
Bruce Inc. of Kennewick was the general contractor.
Tri-City Engineers of West Richland designed the project.
