Columbia Gardens’ newest food truck serves up Cuban food

Another food truck is opening its doors at Columbia Gardens Wine & Artisan Village in Kennewick, offering authentic Cuban eats.  

Cuba Libre is opening at 325 E. Columbia Gardens Way on Dec. 2. Hours are from 10 a.m. to 8 p.m. Tuesday through Sunday. The food truck will serve up dishes including Cuban croquettes, Cuban stew and Cuban sandwiches, as well as traditional slow-cooked Cuban roast pork and Cuban espresso.  

The food truck will offer specials to introduce more Cuban cuisine, described as a fusion of Spanish, African and Asian influences.  

Owner Rafael Najarro came to the Tri-Cities after escaping Cuba in 2016 as a political refugee, and his family arrived six years later. His wife, Yeny, is the main chef of the food truck, which launched this year. Her recipes come from her mother and grandmother.  

Cuba Libre joins several other food trucks at Columbia Gardens, including Botanas Culichi, Frida’s Mexican Grill, Nana’s Kitchen and The Local Bite. 

The area also includes local wineries Bartholomew, Monarcha/Palencia and Gordon Estate, Swampy’s BBQ restaurant, and Wheat Head Brewing Company is making plans to join the permanent establishments.
